White Chocolate Truffle Cake

A sweet moist vanilla cake base with a white chocolate and mascarpone cheese truffle topping decorated with milk chocolate shards and a generous dusting of cocoa powder. A dessert for every sweet tooth out there. The goodness of white chocolate and cream with a soft spongy vanilla cake base is surely a dessert you want to try. it’s a recipe with multiple variations. It can be made with a raspberry topping, or a strawberry topping. If you like cheesecake then you should surely try this recipe out. Like a cheesecake it has a base. However, the base is made with a cake. The cream topping is slightly denser than a cheesecake but just as smooth and decadent. This recipe can be made with dark or milk chocolate too! Instead of decorating with chocolate shards, one can also top it off with fruits or nuts. Walnuts, raisins, almonds and figs compliment the white chocolate cream really well. I also love blueberries and enjoy serving this cake with a blueberry compote. What a perfect dessert to experiment with!

Now let’s get on to the actual recipe!
Preparation time: 3 hours including baking, cooling, and decorating time
Serves 12
Ingredients
For vanilla cake base:
§ 2 eggs
§ 4 tbsp caster sugar
§ 55g plain flour
§ 50g white chocolate, melted
§ 1 tsp vanilla extract
For truffle topping:
§ 300 ml double cream
§ 350g white chocolate broken into pieces
§ 250g mascarpone cheese
To decorate:
§ Milk chocolate shards
§ Cocoa powder for dusting
Method
1. Start by whisking the eggs and caster sugar in a mixing bowl for 10 minutes or until the mixture turns light and foamy and the whisk leaves a trail that lasts a few seconds when lifted. Sift in the flour and gently fold it in with a metal spoon. Fold in the melted white chocolate and vanilla. Pour the mixture into a lined and greased 20 cm/ 8-inch round springform cake tin and bake in a preheated oven at 180 degrees/ 350 Fahrenheit for 25 minutes or until the cake is springy to the touch. Let the cake cool in the tin, then transfer to a wire rack until cooled completely. Return the cake to the tin.
2. For the topping, add the cream in a saucepan and bring to a boil. Stir the cream to prevent it from sticking to the bottom of the pan. Cool slightly, then add the white chocolate pieces to the pan and stir until the chocolate melts and is well combined. Remove the pan from the heat and continue stirring till the mixture is almost cool. Add the mascarpone cheese to the chocolate mixture. Pour the mixture on top of the cake and chill for 2 hours.
3. Remove the cake from the tin and transfer to a plate. Decorate with milk chocolate shards and a generous dusting of cocoa powder.
4. If using fresh fruits, add them on top of the cake to decorate. If using compotes or jams, serve on side.
