Lemon Pasta Recipe

Who doesn't love Italian food? A quick and easy pasta recipe that is fresh and vibrant. Also called pasta al limone in Italy. A simple Italian dish made with fresh lemons, garlic, and parmesan cheese. This recipe is famous in southern Italy and is usually eaten in the summertime. It is very popular in the Sorrentine peninsula and is famous for its taste, fragrance and sustainability in the region. This is my favorite Italian pasta recipe because its light and relatively healthy. It’s a recipe that one can enjoy with a glass of white wine or champagne.


Many variations of this delicious recipe exist, but this one has to be the easiest to follow. A lot of celebrities and famous personalities love this recipe and have recreated it either in their cookbooks or on their Instagram page. If you are looking for a healthier option, you can always substitute the regular pasta with whole wheat pasta or use spinach pasta and skip the cheese or use skimmed parmesan cheese. One can also use chickpea pasta to make this recipe. The flavour is just as good with any kind of pasta you use. If you are looking for a delicious vegan option, you can switch to vegan cheese. A lot of recipes also use white wine to make the sauce. This can be done too! This salad can also be eaten as a salad. Add nuts, veggies, fruits and greens as per your liking. Add meat or prawns or fish and toss together in a large bowl. You can add additional dressing and cheese and serve as a salad. Top it off with a drizzle of extra virgin olive oil too!


I also like eating this pasta with a side dish, usually a green leafy salad. Toasted sourdough bread or garlic bread is also absolutely delicious. One can also add chicken or prawns to this dish. Grilled chicken alongside this pasta makes a wholesome dish. To be honest this recipe is a complete meal on its own. Super delicious and comforting. And guess what? It can also be eaten cold! So, if you have leftovers, don’t worry. Store it in your fridge because it tastes just as amazing when its cold the next day. A delicious recipe for all occasions. It’s got the tanginess from the lemon and the freshness from the garlic and parsley. It’s a great dish for your parties and dinners. It doesn’t take a lot of time to prep for his recipe, so you have a lot of time on hand if you’re hosting a party!

Preparation time: 25 minutes


Serves 4


Ingredients

§ 340g Spaghetti pasta

§ 3 tbsp olive oil

§ 2 cloves of garlic, minced

§ 2 tbsp freshly chopped parsley, extra for garnish

§ Juice and zest of 1 lemon

§ ¼ cup grated fresh parmesan cheese

§ Freshly cracked black pepper

§ Salt to taste



Method

1. Start by cooking the pasta in salted boiling water. Follow the instructions on the package of your pasta to cook it until al dente. Once cooked, drain the pasta and reserve ½ a cup of the pasta water.

2. Heat the olive oil in a pan over medium heat. Add minced garlic, parsley, lemon zest and the lemon juice to the oil. Follow by adding the pasta water and grated parmesan cheese. Mix well and bring the sauce to a simmer.

3. Transfer the spaghetti to the pan and combine with the sauce.

4. Serve the pasta with some freshly cracked black pepper and parsley. Add more cheese if desired and sprinkle some salt to taste.

5. Drizzle extra virgin olive oil if desired.

6. serve alongside some toasted sourdough or garlic bread.
